- Turn off the Instant Pot, pour in the broth, and use a spoon to scrape up any browned pieces from the bottom of the pot;
- Worcestershire sauce and liquid smoke should be poured in and stirred;
- Seal the cover of the Instant Pot and return the pork and rosemary sprigs to the pot.
- Cook for 3 minutes at high manual pressure;
- Let the pressure generally relax for 15 minutes after the cooking cycle has ended;
- Take the pork out of the pot and let it sit for 5 minutes to relax;
- The rosemary should be removed from the liquid and discarded.
- In a separate cup, mix together the corn flour and the three tablespoons of liquid you removed from the Instant Pot earlier; Return the Instant Pot to the sauté setting.
- Whisk the corn flour slurry into the remaining liquid and return the Instant Pot to a boil.
- When the liquid reaches a rolling boil, press cancel and give it a stir.
- The pork should be sliced about 14″ thick and served with gravy and other side dishes.
